Chef Kenny Gilbert is best known for his appearance on "Top Chef" Season seven, where he displayed a big personality and instantly became one of the most likable cheftestants to date. An award winning-chef and restaurateur, Gilbert’s career spans over two decades and has graced him with opportunities to travel around the world and learn the authentic techniques and flavors of global cuisines. He has always had a love of cooking. Growing up in Cleveland, Ohio with roots in the South, his father was an avid BBQ man and his mother, a fantastic home cook.

An entrepreneur, Gilbert launched a product line of spices and sauces in 2015. His restaurant Silkie’s Chicken & Champagne Bar is in Jacksonville, Florida showcasing a global take on the iconic Southern chicken and biscuits.

Counter service dining with self service elements highlighting Artisan Chicken and Biscuits paired with Champagne Cocktails, Wine and Local Craft Beer!

The menu highlights Southern and Globally influenced dishes aligned with the south through Chef Kenny’s culinary experiences.

Brunch highlights 6+ varieties of Chicken & Waffles, Biscuits and Gravy, newly added Chicken + Biscuits & Waffle Cut Fries!

Dinner has a very focused direction of delicious fare with Southern and Global influences, highlighting 17+ dishes to select from to meet all guests preferences.

We are opened Wednesday through Sunday and closed Monday & Tuesday unless for a special event or designated holidays.

Fabulous!!!! Chef Kenny and his crew have created a beautiful place that serves amazing food. The chicken salad is amazing. The smoked Gouda truffle Mac and cheese is the best I have ever had- many times places put way too much truffle in truffle Mac and cheese and it is way too rich.
